In addition to the fact that cabbage also contains anthocyanins, a blue, violet or red flavonoid pigment especially found in red cabbage, which is also responsible for giving those colors to some vegetables. Cabbage also helps rid the body of carcinogens by converting them to their toxic states and flushing them out of the body. This property in cabbage is due to the fact that it contains a group of compounds called isothiocyanates, a family of organic compounds found in some plants such as cabbage, radishes and onions.


Many researches have been conducted on these patented compounds, as they have been used as a pesticide and fight germs. The research concluded that the presence of these compounds in the diet may help prevent cancer in humans, as they carry out this vital and important process to protect the body from cancer.


Buying cabbage: When buying cabbage, always make sure that it is fresh because it is a vegetable that wilts and spoils quickly. When choosing green cabbage, make sure the texture of its leaf from the outside to ensure its quality and firmness. And you should know that the soft and smooth leaves indicate that it is not fresh or has been damaged. When buying red cabbage, it is preferable to choose the purple color from it. As for the size, the medium-sized cabbage is the best, and also make sure that the head has no defects.


Storing cabbage: Consuming fresh cabbage is better than storing it. You can leave cabbage at room temperature for a day or two if the weather is good. Keeping cabbage in the refrigerator provides the ability to keep it for a week in good condition. When keeping cabbage in the refrigerator, pick the outer leaves from it and put it in a hygienic plastic bag and close it well. Note: It is recommended that when you take out the cabbage from the refrigerator for use, check it well. In the event that leaves wilt and mold is seen inside, in this case, it must be disposed of and not used.
